Lemon sauce

Gluten and Dairy Free

2 cups rice milk 1/3 teaspoon agar powder 1 1/2 - 2 tablespoons maple syrup 1 3/4 tablespoon plus 1/2 teaspoon kudzu – dissolved in 1/4 cup water 30ml lemon juice 1 teaspoon vanilla essence 1 tablespoon lemon zest

Add rice milk, 1 1/2 tablespoons maple syrup and agar to a small pot and stir together well. Bring to a gentle boil and simmer for 8-10 minutes, stir often as the agar will sink to the bottom and stick. Simmer until the agar is dissolved...do not boil too hard, but keep to a gentle simmer.

Meanwhile mix the kudzu, water. When the agar is dissolved, add the kudzu slurry to the agar mix and bring to the boil, stirring as it thickens. Add the lemon juice, vanilla and zest, stir through. Test for sweetness, adding the extra maple if desired. Place in fridge until cold.
