Chili Flaked Salmon with Roasted Cauliflower and Green Beans

Ingredients

  • 200g piece of salmon
  • ½ tsp chili flakes
  • 1 cauliflower (chopped)
  • 1 tbsp paprika
  • 2 tbsp coconut or olive oil
  • salt and pepper
  • Handful of green beans
  • Goat's cheese
  • Handful of almonds
  • Lemon juice

Preparation

  1. Preheat oven to 180C

  2. In a large bowl add chopped cauliflower, paprika, oil and salt and pepper and mix until cauliflower is coated

  3. Place on lined baking tray and bake for approx 20 – 30 mins or until golden

    In a shallow dish add green beans and pour boiling water over and let sit for 5

    mins

  4. Drain and top with goat's cheese, almonds, lemon juice, salt and pepper

    In a pan, over high heat, add salmon and cook on both sides for a couple of minutes

  5. Using a fork, start to flake the salmon away. Keep turning the salmon and as it cooks, flake the outsides off the piece.

  6. Once all salmon is flaked, add chili flakes, salt and pepper. Cook until crispy.

  7. Remove cauliflower from the oven and serve with salmon and green beans
